The trickiest part of my day is lunch. I've managed to find some truly wonderful restaurants to lunch at (macrobiotic, organic, vegan meal anyone?) but its getting expensive, and sometimes I just don't have the time. I have a microwave at my office, but since we have many patients coming through, I don't want to microwave something that will have a distracting smell. AND, I want to be able to look forward to it. I don't enjoy the basic sandwich option, and I'd prefer something vegan or at least vegetarian... any ideas? I'm terrible at this kind of stuff...

Love this quinoa salad. Makes for good leftovers to take for lunch during the week.
You, of course, can leave out the feta. Oh and also might be more of a summer thing, but here is a great one from Martha Rose Shulman at the NYTimes:

I find lunch time at work the best meal for me, cause i only eat what I pack. So I pack healthy. I usually pack a fruit for a snack like grapes (which I put in the freezer for later in my work day) or an apple. I also pack lots of veggies. Snap peas are my current favourite raw veggie, cucumbers, celery and a lot of times I pack a salad with dressing on the side. Sometimes I also pack a sandwich or roll up which usually has some form of meat or tuna. Sometimes I pack some soup. Campbells has a soup In Hand soup which isn't too bad a calories but is really high in sodium however. Lately I've found a Campbells soup that is low in sodium, measure out one serving into a container and then heat it up in the microwave at lunch time. Broccoli slaw is another favourite of mine with a low cal coleslaw dressing and I add a box of raisons to it too.
