Asian Food!!

Hey everyone. I am wondering if there are people on this site with a good knowledge of traditional asian food. I am travelling through south east asia: cambodia, vietnam, laos, thailand, malaysia, indonesia and am going to try to eat clean and healthy and local. Obviously I need to limit friend foods and coconut milk but apart from that are there any other tips or knowledge people can impart on me about how the food is prepared and what are good things to order. I am thinking pho in vietnam but thats where my knowlege ends. Even what you know from ordering thai food at home would help me!! Thank You
