Garden Vegetable Soup (aka. Zero point soup)
2/3 cup sliced carrot
½ cup diced onion
2 garlic cloves, minced
3 cups fat-free broth (any flavor)
1 ½ cups diced green cabbage
½ cup green beans
1 TBSP tomato paste
½ tsp dried basil
¼ tsp dried oregano
¼ tsp salt
½ cup diced zucchini
Spray a large saucepan with nonstick cooking spray, heat.
Saute the carrot, onion, and garlic over low heat until softened, about 5 minutes.
Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil.
Reduce heat; simmer, covered about 15 minutes or until beans are tender.
Stir in zucchini and heat for 3-4 minutes.
Serve hot.

Yup, always good stuff. Here’s my batch with a photo from last winter (I triple the recipe to make 8-9 servings to eat at lunch and dinner for almost a week at work).
* Sorry the photo is small, my photographs are at home, I just did a print-screen of the recipe book I made while I’m here at work.
I’m going to make it again this week but I decided to add lentils, sweet potatoes and chicken making it a 2 WW point soup. It should be good!

I think this is the recipe that I made before and it is yummy! One of my friends added a pack of that Lipton chicken noodle mix, not sure what the calorie count would be but it was good too!0
