I need to gain but going over sodium etc

Im 107 5'5" i need to gain weight i lost due to being stressed and not eating. But when i track my calories i hit only 1400-1500 before im maxed out on everything, Im needing atleast 2000 calories a day, I have been feeling like i have reactive hypoglycemia so trying to make my diet around that until i can see doc, any food ideas? im basically getting my calories from peanut butter, oatmeal, wheat bread, cheese, veggie salad with sunflower seeds... trying not to consume any sugars besides strawberries and whats already in the bread or veggies naturally. I go over in fat, sodium, cholestrol and fiber barely at 1400-1500 cals.. please help. Is it ok to go over? and what i meant by reactive hypoglycemia, is im getting the symptoms of high and low blood sugr but my blood sugars are normal.. so maybe it just feels like blood sugar from too low calorie intake? any info or tips will be greatly appreciated!

Focus on the calorie count.
Ignore the macros. You will have to go over them.

yeah im eating like 6- 8 times a day, i feel like i have a sugar crash every 2 hours. even though blood sugar is in 80's-90's by next meal. todays meal plan i have
1/2 cup oatmeal, 4 strawberries, 1 egg, lettuce, tomato, sunflower seeds, turkey 4 oz, 1/4 cup green beans,2 ounce baby carrots, 1 cup apple, 4 100% whole wheat bread, 4 tbsp natural low sodium peanut butter, 2 ounces tillamook cheddar cheese.
calories =1484, fat=72 ( 4 points over limit for 2050 calories), cholesterol= 305 (5 over) , sodium= 1860, carbs = 142, protein= 840 -
since im only 107 lbs and blood work is ok can i eat whatever? surprisingly when i wasnt eating that much i still had sodium levels of 143 and protein of 7 in lab work. i get this weak heavy leg thing and lightheaded, really bad after i had a burger the other day or maybe it was the sugar from the bananas? is it possible that instead of having to do with blood sugars its my body adjusting to eating more? i was probably at 500-1000 calories for a long time, not purposely but just had no appetite. although i have had lab work say my glucose was 65 when i ate 1 hour before.0

Yes i will be seeing one soon, i have an appointment. i have anxiety disorders im eating more then i was as i lost appetite through stress. so im sure my body is overreacting to food and it will work itself out, it just feels scary when its happening. im slowly increasing calorie intake so i dont shock my body any further. I used to eat a very crappy diet when i was eating more and i think im part my body is trying to adjust to not only healthier foods, but less sugar intake.. im talking lots of white bread, potatoes, cake, ice cream, candy etc.. i decided i wanted to work from the ground up and build a healthier me, just need to figure out the diet. I switched to wheat bread and no junk or candy, i want my adrenals to heal from the panic attacks i have been having for 3 years! thankyou so much for your replies. = )0
