This idea was inspired by Denny's Fit Fare Veggie Skillet.

Cut up a potato and either pan fry or roast in the oven. Once the potato is cooked, set aside on a plate.
In a skillet, saute bell peppers, onions, garlic, broccoli, spinach and tomatoes for a minutes. Meanwhile scramble some whole eggs or egg whites in another skillet.

Time to serve, place the potatoes on the bottom of the plate, top with the veggies and then the eggs. Serve with salsa on top. So good!

Perhaps to even give it a tex-mex feel, use a sweet potato and maybe substitute the broccoli for corn and black beans?
