Homemade Apple Oatmeal Bars

These are a nice alternative to the commercially available apple cereal bars.
Recipe:
1/2 cup brown sugar
2.5 Tbsp unsalted butter
3 Tbsp unsweetened apple sauce
2 large eggs
1/2 cup whole wheat flour
1/4 cup all-purpose flour
1 1/2 tsp cinnamon
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
2 apples-cored, peeled and diced (approx 250 gr total)
1 cup rolled oats-reserve 1 Tbsp ( I use regular oats but you can use quick cooking as well)
Preheat oven to 375 degrees and line an 8 inch baking pan with parchment paper. In large bowl beat brown sugar and butter together. Add applesauce and eggs and beat approx 1 minute. Combine both flours, the cinnamon, baking powder, baking soda and salt and then stir into the mixture until blended. Stir in oats and apples. Spread/press mixture into pan and sprinkle with the 1 Tbsp of reserved oats. Bake 25 to 30 minutes until a wooden pick inserted in centre comes out clean. Cool completely and then cut into 10 bars. They will store in the fridge 3-4 days or they can be frozen.

Carbs: 273 gr
Fat: 45 gr
Fibre: 21 gr
Protein: 36 gr
Per Serving: 162 calories, 27 gr carbs, 5 gr fat, 2 gr fibre, 4 gr protein

I made a mixed berry version of these today. They really do work well with any fruit but you should make sure to drain the fruit well. For the bars below I used blueberries, raspberries and blackberries (250g of fruit in total). I also omitted the cinnamon and added 1 tsp of vanilla instead (I reduced the applesauce by about a tsp to accommodate the vanilla). I didn't rework the macros because I don't think they will change all that much just from changing the fruit. Maybe +/- 5 calories a bar so not really significant IMHO.0
