Low cal recipes using tomato sauce?

Recently I've been baking my eggs in tomato sauce but I'm looking for new ways to eat tomato sauce without pasta or bread!!~ Anybody got some clever recipes they would like to share?

This is the one I've been using from Laura in the Kitchen:


Serves 2

Prep time: 10 mins
Cook time: 25 mins

Ingredients:
4 Eggs
2 Slices of Bacon, chopped
2 Cloves of Garlic, minced
15oz can of Tomato Passata or any other tomato sauce
2 Tbsp of Fresh Chopped Parsley
Salt and Pepper To Taste
Pinch of Hot Pepper Flakes
Freshly Grated Parmigginao Reggiano (parmesan cheese)

Process,

1) Preheat a skillet over medium high heat, add the bacon and allow it to render out some of it’s fat and crisp up a bit, this should take about 2 minutes.

2) Add the garlic and hot pepper flakes and continue to cook for 1 minute.

3) Add the passata and season the mixture lightly with salt and black pepper, partially cover the skillet, turn the heat down to medium low and let the mixture cook for about 15 minutes.

4) Add the parsley and give it a good stir.

5) Crack each egg into a small ramekin and add them one by one on top of your sauce, cover them with the parmesan cheese, cover the skillet with the lid and allow the mixture to cook for 3 minutes (this is if you like your yolk just set, if you like it runny, cook them for less time)

5) Serve the eggs with the sauce over rice or just chunks of crunchy bread.

    Add some liquid and turn it into tomato soup? Great with some feta cheese, bread, some beans or lentils added for example. :)

    There's so many ideas! Spaghetti squash, roast eggplant, turkey meatballs, zucchini lasagna, chicken parmigiana, shrimp fra diavolo or creole, chili, stews, stuffed cabbage - there are so many ideas! :)

    If any of these sound appetizing to you, type them into google. Just about all (if not all) of the above ideas are low calorie or have low-calorie versions that are just as delicious as full-fat versions.

    I love making stuffed peppers and pour a large amount of tomato sauce over them when baking, and ladle it on top when I serve them. They're also a meal in themselves, and doesn't require sides if you don't want them. I put brown rice, onion, bell pepper, ground beef, and a small bit of tomato sauce in mine. I then add the rest of the tomato sauce on top (and make sure there is extra in the bottom of the dish to ladle over :wink: ). I bake on 350 until tender, usually 30 minutes-ish.
