Ok so I've tried my share of protein pancakes.
Either they didn't rise, or they were tough or runny... Just ugh.
The secret? Casein protein.

My recipe:
1 scoop casein protein (I use ON's Banana Cream Casein bc it tastes gross as a shake????)
1 whole egg (I used jumbo lol but extra large is fine too)
1 egg white
Dash of cinnamon
Some sweetener (I used a Splenda packet)
& just enough water to make it into pancake batter consistency

That's it!!! No baking powder or baking soda needed :)

I added a handful of blueberries in the batter bc blueberry pancakes are awesome
Makes 5 normal sized pancakes.

(Cook on medium heat, flip and flatten pancake so it cooks evenly)

Macros without blueberries:
234 calories
7.2 fat
3.3 carbs
37.5 protein

There are conflicting reports about negative health effects of casein. You might want to read up on it and make your own judgments about whether to use it or which vendors you trust.

Casein is found in milk. If you have preexisting health conditions such as kidney problems then maybe you shouldn't take casein. Or if you have milk allergies.
Just trying to post a helpful recipe for those interested in protein pancakes.
    Can't please everyone...

This is perfect! I bought some casein protein quite a while ago and found that it was quite horrible in shakes (as you noticed as well), so I've just had this case of casein sitting around my house with no use. Until now, that is. :) I am trying these out tomorrow! Thanks for sharing!

Been meaning to try protein pancakes. I might try 2 versions, with casein and the other whey. And see which one I like, thanks for sharing :D
