Hamburger Harvest Soup

This is a hearty soup perfect for those cold winter days.

Ingredients
3/4 lb lean ground beef
1 cup celery, chopped coarsely
1 cup carrots, sliced
1.5 cup mushrooms, sliced
1 small onion, chopped
2 cloves garlic, minced
1/2 cup brown rice
3/4 cup canned corn
6 cups water
1 cup tomato sauce
3 beef bouillon cubes
1tsp dried basil



Directions
Brown ground beef in large, heavy pot. Drain off any fat. Add water, bouillon, rice, celery, carrots, mushrooms, onion, and garlic. Bring to a boil, then simmer over low flame 30 minutes. Add tomato sauce, corn, and basil. Cook 5 more minutes. Serve hot.
