Warm Spinach & Cherry Tomato Salad

An abundance of ripe cherry tomatoes in our garden this week sent me searching for something to use them in besides cold salads. We love spinach, so this is what I came up with for supper tonight. We grilled some chicken to go with the salad.
Ingredients:
cherry tomatoes 222 grams
red onion 100 grams
mushrooms 161 grams
spinach fresh 250 grams
Classico Basil Pesto 1 tbsp.
Extra Virgin Olive Oil 1/2 tbsp.
Shaved or crumbled cheese of choice
**This almost makes me cry. We had a health emergency with my husband's uncle and I got very distracted. I left out BACON!!!!! So the most important ingredient - crumbled bacon. I have tears!
(These are the ingredient amounts I used for about 3 servings. Because you may use different amounts, I did not figure calories)
So, wash and chop all your veggies. I halved the cherry tomatoes, because they are rather large this year and biting into a hot tomato is painful.
Get the ingredients together. Add your olive oil to a large skillet.
Next in are the mushrooms.
When mushrooms are about done, add onion slices and tomatoes. Stir in the tbsp. of pesto.
At the very last minute, add the raw spinach leaves.
Plate and shave a little cheese of your choice on top. We used a bruschetta pepper jack tonight. It was okay.
After eating this, we decided we will add yellow squash next time and maybe even try it over pasta.
