New recipe ideas to lose final 1 stone over the summer

Hi all.
I am Gail, I'm 48 years old and live in the UK.
I have, over the last 18 months, lost nearly 4.5st. Most of that came off quickly, but as you all know (unless you are incredibly lucky) the last bit is the hardest to lose. I still have approximately a stone to get to my target and would like to get this shifted over the summer.
I am in a good situation to do so. I'm a teaching assistant, so from the 18th I will be off work for 6 weeks.. In theory that means more time to plan healthy meals, and the biggy- more time to exercise!
Problem is I'm bored of eating healthily. Have any of you out there any delicious low fat recipes that don't cost the earth to make? I eat almost anything, I'm not picky - that's why I put the weight on in the first place!
Anyone want to take the challenge with me?

My latest find is Vietnamese spring rolls. Tesco sell a kit, or you could make your own if you can find rice wrappers. About100 calories for 3 rolls.0

I'm trying this cauliflower based pizza tonight, it's from a US site, so I'll have to convert the cups to grams.

I'm not sure what the calories will be, but it will be a lot less than a supermarket pizza.

Cauliflower pizza looks good. Would have to replace the goats cheese with similar cows cheese. Said I liked eating almost everything and straight away a member found something I disliked :laugh:0
