about cooking fatty meat and yields

I am a fan of fatty pork like pork belly and it has very high calorie and fat percentage. I see from a yield document that the closest pork cut that is leaner than belly is shoulder and it has maybe 60ish yield. Does that mean i can reduce the calorie by 40%? If it is 2000calories i am actually eating 1200? Just kind of curious... thanks.
