I love blackened chicken so I will definitely try this. Any suggestions on a good blackened rub?
Omaha Steaks...or even McCormick's if you're in a pinch. There's also lots of recipes online if you feel like making your own.

If you’re looking for a delicious chicken recipe that’s perfect for either family or company, you just so happened to pick the right message board topic. This is not just another chicken recipe. This is THE chicken recipe.

Lol amazing how many people like overcooked, dry chicken. 400 degrees for 20 min with no brine will destroy the chicken breast.

What is Blackend seasoning? I haven't heard or seen it before...is it readily available in any grocery store?

It's a spice blend usually consisting of salt, chili pepper, red pepper, paprika, onion and garlic. I know that McCormick makes some, and that brand is usually available at most stores. If you can't find it, there are several recipes online to help you make your own. :)

Same as Cajun seasoning I believe. It's what I've been using at least (on everything... fish too).

Thank you! I typically create/look for full-flavor recipes that are relatively easy to make. Glad you enjoy them! :)
