Meal Prep+Intense Workout=weight gain?

Hi all!
I have been trying to outrun my diet for about six months, and although I am now more fit, I still have a ways to go from my goal. I decided to hit it hard, meal prepping 3 meals and 3 snacks per day. I feel thinner, but the scale this morning said I gained!!
I run and do insanity on Mondays, Wednesdays and Fridays, and lift weights and do Insanity on Tuesdays, Thursdays and Saturdays. I also stay active on Sundays, usually hiking, walking or riding my bike. In addition to this I ride my bike to work everyday for a total of about 40 minutes. I use a heart rate monitor so I correctly log the calories I burn, and I weigh every thing I eat, including produce.

So... what gives!!
