Need some advice

While attempting to keep this short, my weight loss story is a bit different to most. Originally I hadn't planned to lose weight or to take this much effort into doing so, I had no plans on signing up to any tracking sites like MyFitnessPal. For me it was a challenge, a 1 week challenge actually to see how much weight it was possible to lose in a week.
I obviously knew I was severely overweight but it's never been an issue for me, I hadn't ever planned on losing weight or dieting but now it's become an important part of my daily life. My starting weight was 321lbs (22.9stone) & the most exercise I get is typing on a keyboard & taking the dogs out so I'm by no means active.
I started on June 2nd 2014, after the 1st week I was down 7lbs, then I read up on water weight & just presumed it was that, so I gave it another week. In the 2nd week, I lost another 6lbs. I was intrigued & amazed at how quickly the weight was coming off. I thought something must be wrong with my scales, so I bought another pair, and they said the exact same weight. After the 3rd week I was down 19lbs total. Now it's 16th July, 44 days later after starting the diet & I've lost more than 30lbs. This is without any exercise so I'm finding it quite strange as I've always thought you need to work out to lose any significant weight.
As I'm completely new to this weight loss stuff, I have some questions if anyone can answer, it would be most appreciated.
1. My scales have the two settings of pounds & stone. On the stone setting, when I weigh myself it says 20.5stone, which is apparently 287lbs, however when I use the pounds setting, it says 282.5lbs. How can I know which is correct? Am I converting it wrong or something?
2. Is 30lbs+ lost in just over 6 weeks a normal thing for someone at my weight?
3. Are there any negative effects regarding weight with drinking diet fizzy drinks?
