Chicken Tikki Masala & Thai Red Curry

I love to cook and I'm always looking for lighter ways to make "classic" dishes. I've recently tried Indian food and really loved the chicken tikki masala but I understand it can be high in calories so I wondered if anyone had a great healthy recipe for it. Also, I love Thai red curries but I've tried a few different recipes at home and didn't care for them. I like it pretty spicy - I usually have it with chicken but am definitely open to a fish/shrimp curry or even just vegetables (in fact, I'm trying to incorporate a couple of vegetarian meals per week into my diet). Really, any tried and true healthy recipes in these genres are welcome

I am a huge fan of sambhar. It is a soup made from dried pigeon peas which you can buy at any Indian mkt . It will be labeled toor dal. The sambhar powder for the soup base can also be bought there. You will need to have a pressure cooker but they are cheap and extremely useful for Indian food. The vah chef video is a good one

I'm jumping in so this will be in my feed. These are two of my favorite meals, of any cuisine, and I'd love to see the answers you get!0
