Getting bored with vegtables?

Ok...first off.....I LOVE my veggies...I usually either have a salad with cucumber/romaine/tomatoes & oil/vinegar dressing or steamed veggies like broccoli, cauliflower, carrots, squash or asparagus....I alternate but I'm getting bored..,,anyone have any ideas? Keep in mind that 90% of the time I do frozen veggies

I like trying different herb blends with them, moroccan, italian, greek, cajun... I also sprinkle them with dukkah, or make a lemon/dijon/vinegar dressing for my steamed veg.
Also I will roast them instead of steaming, it changes the flavour up and is delicious. Toss them with some olive oil and balsamic first.0 -
I have nothing to offer in the way of advice, but I can empathize. We eat all of about 10 veggies in my house if we are lucky and every week it is getting to be the same thing, day after day. My narrow scope when it comes to cooking doesn't help.0

You can do a sweet potato casserole, squash casserole or a zucchini casserole. All super yummy.0

You can roast frozen but you need to do it on a much higher temperature, because they don't need to be cooked, just heated through and crisped up.0

Check out Pinterest for ideas? I always see lots of yummy recipes on there. Do you have a farmers market nearby? You can find fresh, unique and sometimes affordable veggies there.0

Frozen vegetables are not cooked they are just flash frozen so to roast the just thaw them out and roast them according to your recipe.0 -
A follow up to my previous comment: The only exception I cam think of is spinach. It is wilted before freezing0

Sauteed bell peppers of any color (green, red, yellow, orange), shallots, and mushrooms in evoo.
Turnip "Fries" (peel the turnips like potatoes, cut in small wedges, toss in evoo, bake in oven aboue 45 minutes until soft and turning brown) salt/pepper as desired.0
