Meal planning: Turkey

Has anybody actually bought an entire turkey to roast for their meal plans? I feel like I should be doing it, freezing the left overs and have enough turkey for a few months. Am I in the wrong, or is it too extreme? I haven't checked the financial difference, but I feel I'd get more bang for my buck(?)

    If you enjoy turkey - both white and dark meat - this wouldn't be a bad idea. However, you probably will want to eat it within 2-3 months to avoid freezer burn.

    We live close to a Norbest plant and buy their turkey breast 5 lb. bags often. I roast the entire 5 lbs and we have it for a few meals (most often freezing about 1/2 - but I use it the next week or so).

    I did this a few years ago when frozen turkeys were on promotion. It was an economical, high protein food. After you've carved off all the meat, you can boil up the carcass with some veg (onions, carrots, celery etc) to make a delicious soup.

    I'm just trying to find the most economical and easiest way to plan my meals, especially once I go back to work at the end of August. Starting to prep and practice now :)
