New to the forums, hoping for advice

So I've got a few things going on I think. Would love your input. My GP was rather useless for advice ![:( :(](https://community.myfitnesspal.com/en/resources/emoji/frowning.png)
I do the food reporting on here on and off, so currently there's nothing for you to look at :-X
I'm 23, 5'1. I've had three kids. Pre children I was 116. After my first, 118, my second 118-120, and by the time I weaned my third I was back to the 119-122 range. I think that is a pretty good target weight range for me. When I am around that weight I feel energetic, happy, hormones seemed balanced, my clothing fits haha, all that lovely stuff.
I LOVE food. And, I grew up eating carb and comfort foods. Lots of it. No one ever put a restriction on my intake (obviously my metabolism was helping me out nicely my first 20 years) but I got accustomed to eating between 2,800-3,600 calories a day especially when pregnant and nursing (yes, I did seriously gain weight while pregnant, I was like the blueberry girl from Willy Wonka.)
After I weaned my youngest last fall, and with the pressure of my then boyfriend, I ended up gaining ridiculous weight. I went back up to my last pregnancy weight - 147 pounds! Yuck! I felt/feel awful.. Tired, hormones out of line, no motivation, depressed, just want to eat more and more...I'm sure many people here understand what I am saying?
This March I decided to get serious about losing and maintaining a healthy weight. My goal is 120-122 pounds. To date, I am 131 pounds so I have lost 16 so far! However, I have mostly just stalled. Plateau?
I would consider myself active, but not as active as I could be. I do think we generally eat healthy in my home, but currently I am re-examining to see where I need to alter things more...
I used to have an awful time regulating my blood sugar. Happens still on occasion but it has seen an 85% improvement since I made myself used to eating breakfast. Lately breakfast might consist of one to two eggs fried in olive oil, maybe a yogurt or piece of fruit, home made whole oatmeal topped with chopped fruit or a spoonful of brown sugar, etc plus my coffee. Having a hard time finding any more breakfast options.
I get this weird belly bloat thing. Google says it may be more common than I realize. I definitely see correlation between eating wheat or too much dairy and the bloat. The last three weeks I have gone increasingly more low/no wheat and trying to push low carb altogether. Any wheat I consume has been like a cracker I jacked from the kids, a few random donut holes, or when I might find myself eating from a restaurant it can be very hard to find something with no or low wheat involved. This bloat can add as much as four pounds to the scale for up to two days depending what I ate and makes me feel really "off". That is crazy! Is this like the definition of a sensitivity to wheat?
We do low dairy here, about the last 3-4 years. It was around that time when I started an almost annual trip to hospital for an infection of some sort (I have a blood disorder, makes me susceptible to infection and difficult to fight off illness) and would require several doses of IV antibiotics. I do believe that my sudden development of dairy sensitivity and developing eczema has to do with the IV ABX I have had, maybe the wheat as well? We have gone to almond milk, rarely have ice cream (usually an ice cream stand summer treat if any), I have a few yogurts a month, and we always have cheese (I have seriously cut down on cheese due to the calorie content though.)
Lots of fresh produce here. I buy things organic and as close to natural as I can when it makes sense to (especially meats and eggs.) I do my best to eliminate extra food coloring, HFCS, any artificial sugars, completely fake foods, and the like. Sometimes you can't go too strict but usually there is a junk-free alternative item sitting right next to the junky one on the shelf. Extra virgin olive oil and REAL butter here.
We live on the fourth floor, walk-up. Between kid schedules and daily requirements/missions, I am up and down these stairs anywhere from 6-12 times a day easy. Almost every morning I am gone for a walk, 20 minutes to an hour, running errands or just walking. If I get the chance to, I LOVE to go hiking or nature trails. Two weeks ago I started jogging in the mornings. I have to jog slower than most would, lack of those red blood cells, but I was pushing two miles a day 3-4 mornings a week. I did see a few pounds drop during this time, until I hurt my ankle. It appears to be a stress fracture
I am impatiently awaiting it to heal enough to get back to jogging.
I am slowly improving my discipline with drinking enough water. I have also cut my portion sizes down to nearly what I give the kids and try hard not to snack on dense or unhealthy foods. Most of our snacks are fresh fruit or veggies and NatureBox snacks.
Sorry I write novels. Hoping someone can tell me something I don't already know.
