Does anyone know how MFP determines the daily goals for carbs, protein, and fat? Just curious because I have found various other sources that state a different #s.....

They go with a standard ratio that is within the guidelines for the Acceptable Macronutrient Distribution Range put out by the Institutes of Medicine. It's just a standard, though, because it would be next to impossible to customize it for everyone without actually examining them in a lab and determining what they are burning through exercise. It takes trial and error to actually see what works best for your body. You can go to the goals page and adjust your percentages based on what you are wanting to try. Some people work better with high protein, low carb, moderate fat and others work better with high carb, low protein, low fat. Play with them based on how your body responds and your medical conditions. People with diabetes issues, for example have to really watch their carbs (specifically cutting high glycemic index carbs) and other people have cancer or kidney issues and have to really watch their fat or protein respectively. So, use the baseline on MFP as a guide, but definitely adjust it based on your specific needs.

For two, it proposes way too little protein and fiber for any normal person..
