Crudite Ideas for Lunches

Hi All

I'm looking for some crudite ideas for my lunch.

At the moment I am trying to eat clean and low FODMAP and have Cucumber and Carrot but am looking to add to it.. It needs to be raw and quick and easy to prepare.

I've established i don't like raw Baby Corn (sadly). I can't eat pepper as it gives me indigestion and I don't like tomato.. Any other ideas? I want to make them more interesting. Due to the FODMAP thing i can't have hummus or falafel (sadly :( )

    I have no earthly idea what FODMAP is but here are some other crudités I like:

    Sno peas
    sugar snap peas
    sliced mushrooms
    broccoli florets
    cauliflower
    raw onions (not for everyone, but I like them along with other vegetables)

    Do you have your Broc & cauli raw?

    FODMAPs are short chain carbohydrates that are poorly absorbed in the small intestine (and give me grief lol)

    I have a hard time with baby carrorts- mostly because I tend to eat them alone- and I am sensitive to the Vit K- so I get nauseated when I consume them alone. I have to eat it with some sort of fat's. Full size carrots seem to give me less grief (WTF??) but it is what it is.

    My other suggestion would be zucchini- I eat it raw and cooked.

    I'll eat broccoli and cauliflower uncooked as well- but I prefer them cooked.- just a matter of how lazy or not I am.
    Have you tried bok choy? it's a cabboge but it's a nice addition to the mix.

    Thanks Jo! Am making a list for the supermarket as we speak.. When you cook these how long do you keep them in the fridge before you NEED to eat them. I'm wondering if i can be lazy and cook a batch every few days.. I would love a bowl of veg for lunch every day!

    depends on how ripe it was when you purchased it- an how you are storing it. I tend to buy produce once a week- a few things make it a little longer- corn last longer- but it's not something I eat a lot of so I don't pay attention.

    If you store it properly usually you can get 7-10 days- most of my veggies/fruit doesn't make it past that. I usually batch cook on Sundays and pre-weigh out my meat/veggies into tupperwears so there is minimal prep work to do on the day I eat said items.
    If you pre-chop veggies it makes it much faster as well.

    That's what I do.

    I work 8-5 and then I have dance class and working out and things- so Monday and Tuesday I leave before 8 AM and often do not get home till 10 or 11- so little time for cooking. It's just much easier to cook/prep on Sunday.

    Sometimes I cook two meals- one stove top- on ein the oven- or one in the crock pot- so I can rotate my food. Usually one meal on Sunday gets me through till wednesday- BF is here- and we cook or go out- then I gotta figure out something for Friday- when we weren't doing a ridiculous schedule with him visiting mid week- I cooked Sunday and Wednesday for lunches and dinners.

    <<<<<<< lazy- lol I cook a lot so I only have too cook 2x a week.
