Tracking Physical Therapy? Upper body exercise suggestions?

I'm recovering from a severe ankle sprain/partial ligament tear and I started physical therapy last week. I'm not sure if I should try to include this is in my exercise log or leave it out?
Also, as I'm very limited with the amount of walking (my main form of exercise) that I can do right now, any suggestions for upper body exercises that I can do while keeping my legs fairly stationary?

Bench Press, Seated Over Head Press, knee push ups, Curls, dumbell rows.
There's also a lot of machines that will make it easier on you.
