I would be lost without my slow cooker and fell in love with Jerk Chicken when we were in Jamaica on vacation. Had to share.

Ingredients

4 pounds bone-in, skin-on chicken pieces
1/4 cup fresh lime juice
1/4 cup fresh orange juice
4 garlic cloves
2 tbsp fresh thyme
1 tbsp minced fresh ginger
1 tbsp dark brown sugar (leave out or use Stevia/Splenda for Paleo, low carb, clean eating)
2 tsp allspice
4 scallions
1.5 tsp salt
2 tbsp white vinegar
1 red pepper, seeded and chopped
2-3 habanero peppers, seeded (or jalapenos for less heat)
Optional: 2 cups chopped pineapple
Instructions

Add the lime juice, orange juice, garlic, thyme, ginger, sugar, allspice, scallion, salt, and red pepper to a blender or food processor. Blend/pulse until well blended.
Taste and begin adding the habaneros/jalapenos one at a time, tasting the sauce each time until it is as spicy as you like. The spice will become a bit milder during cooking, so you may want to make it a touch spicier during this step.
Season the chicken with salt and pepper. Add the chicken pieces to the slow cooker and cover with sauce. Cook on low for 8 hours. If using pineapple, add in the last 30 minutes of cooking.
Optional: If you want a crispier skin to the chicken, broil it for 4-5 minutes untit it crisps up. You can also remove it completely. For a delicious jerk sauce for the chicken, simmer the remaining liquid in the crockpot for 4-5 minutes until it thickens up.
