Low cal & gluten free faux mac n cheese
Just discovered hominy (its basically corn but BETTER :bigsmile: ) and after looking into some recipes and playing with it a bit I made a great alternative to mac and cheese - something I havent had in ages!
This is the measurements and macros for my serving:
- 1/2 cup canned hominy (60 calories)
- 2 tablespoons 2% cottage cheese (25 calories)
- 1 oz light shredded Trader Joe's mozzarella (45 calories)
- .25 ounces cheddar cheese (35 calories)
- salt, pepper, seasoning to taste
1. Put hominy in pot with a little water and bring to simmer and leave for 15 minutes or until hominy is soft. (water will be absorbed into hominy so make sure to keep an eye and add some water if needed to keep from burning)
2. If there is still water in the pot drain. Then add cottage, cheeses and seasoning.
3. Enjoy.
Nutritional breakdown: 161 calories. 15g carbs, 6g fat, 11g protein, 3g fiber
Notes:
- This recipe is gluten free.
-The cottage cheese is there for added creaminess it can be taken out or subbed for sour cream or greek yogurt.
- I know putting a whole ounce for 1/2 a cup is a lot but it makes it extra cheesy :laugh:
- You can also take the mixture and spray a frying pan and make a "pancake" or bake it to give it a real mac & cheese taste.
