Need help finding food to eat to increase my calories intake

I have been bad about eating enough calories. I know I should eat another 300-400 more, but I eat pretty healthy and am not hungry. I usually have about 300 calories for each of the 3 meals and then another 300 calories in snacks, which leaves me at about 1200 (which I know is not enough when I am exercising off 400-500 cal each day). So I am looking for heathly food ideas to add in some extras and when to add them. I am not a vegetarian but avoid red meat and I like nuts, but I find I go over my fat percent if I eat those. I am confused so any help would be appreciated. I tend to hit low in protein as well so high protein extras are probably what I need.
