LCHF Cheesecake Pudding

I recently started a LCHF (low carb high fat) diet and I am in love with it so far.

I was having a sweet craving and I came up with this recipe modified from several low carb dessert recipes I found.

This is NOT low calorie or low fat. I am counting carbs so that is all that really matters to me right now.

This is crazy filling, I ate 1 serving for lunch and I didn't know if it was going to be enough food, by the end of the bowl I was so full I could barely keep eating it... even though it tastes so good. Like a lemony NY cheesecake.

Cheesecake Pudding
4 generous servings

1 8 oz pkg cream cheese (you could use neufchatel to lower cals a bit, all I had was regular)
1 cup plus 1 tablespoon Heavy Whipping Cream
1/2 pkg Sugar Free French Vanilla pudding mix
1/2 cup Fage 2% Greek Yogurt (you could use sour cream, all I had was yogurt)
Liquid Stevia sweetener 2-3 squirts or to taste
2 packets True Lemon (crystallized carb free lemon)
1 tsp Vanilla extract imitation

In a stand mixer or using a hand mixer whip just the heavy cream (holding back 1 tablespoon) until it becomes stiff, set aside.
Add together the rest of the ingredients (including reserved cream) and beat until smooth and combined. Add in the whipped cream and gently mix together to your preferred texture.
Let Chill or eat right away!
