Regarding meat, if it says 4 oz in the Database listings, is that 4 oz of meat before it's cooked or after?

Hard to say. I would include the word "raw" (it also helps to locate the database entries that are based on nutritiondata.self.com).
Or if you aren't using raw, type in method of cooking, like "roast" "baked" etc. That way you know.
The best option is to log the raw weight. It's not always possible but when you can, go with that.0
