help! What is my activity level?

Hello, I was using mfp for ages over a year ago and was doing great losing weight on it. I then fell off the wagon and had to start all over again, I've only just started being more strict in filling it in for the past week or so but I am not sure what my calorie goal should be. I am 5'6 and weigh 90kg and want to get back to 75kg as my first goal. At the moment I have set my activity level as sedentary and this has given me a calorie goal of 1510kcal a day. However I do three 12 1/2 hour shifts per week in a hospital and the rest of the days can be either really quite sedentary or really quite busy. I don't want to set the goal too low because although I am sure it will initially help me start to lose I have plateaued before due to low calorie intake.

I'm struggling to get back into a gym routine so some days I don't have very high activity levels... I'm just not sure if I'm sedentary or not.

I'm assuming your not an administrator so you're often up and running which would be an active person.
It might be a good investment to purchase a fitbit type of device or download a tracking app for your phone if you have that option and carry it with you. You can select sedentary and eat back your calories burned.

You're not sedentary. Your ob has you on your feet a good bit of a 37.5 hour work week, so I'd set the activity level to "Lightly Active", try that for a few weeks and then adjust if needed.

That probably averages out to "lightly active", imo. I agree with PP that some sort of tracker would be helpful. Even a $10 pedometer would be better than nothing. Otherwise, there are so many brands of more advanced trackers out there now that you should be able to find one that fits your needs.
