I call it my mighty bran muffin
Options
1 1/2 cup wheat bran (winco bulk)
1/2 cup wheat flour (winco bulk)
2 cups nonfat greek yogurt (Choboni)
1/4 cup egg white (all white)
1 1/2 cups pumpkin puree (libby 100%)
1 tsp pure stevia (BulkSupplements)
2 tbsp cinnimon
1/2 tsp ginger
1/4 tsp nutmeg
1 tsp pure vanilla extract (Simply Organic)
3 tsp baking powder (Rumford reduced sodium)
2 tsp apple cider vinegar
8 tbsp benefiber(taste free)
4 servings vanilla whey protein(EAS 4 servings=104g protein total added)
Makes 12.
Mix wheat bran + yogurt. Mix all dry ingredients together. Add everything else to the dry mix(Use a tiny
bit of water if needed) Mix bran/yogurt with the rest. Spoon in. Cook@375 for 15 to 20 til passes toothpick test.
1 muffin = Cal: 134 Carb: 18g Fat: 1g Protein: 15g Chol: 27mg Sodium: 148mg Sugar: 3g Fiber: 8g
Packs 5g of fiber without the benefiber. Tried it and it came out tasty, so I thought I would share. My body handled it fine but I do drink a good amount of water and fiber regularly. My roommate on the other hand did not handle 8g of fiber well lol. Cheers.
