Amaranth greens

Does anyone have a good recipe for amaranth greens? This is my first year growing them and I just brought in my first harvest and haven't the foggiest clue how to prepare them - I have come across a few recipes online that recommend sauteing them, but I was hoping some of you might have some feedback or personal experience to share.
