Amazing & easy pasta recipe

I whipped up something tonight that turned out GREAT- it's almost like a seafood alfredo :love:

2 ounces pasta (I have to have gluten free pasta)
3 ounces pre-cooked shrimp
1/2 cup of diced tomatoes (I used Del Monte Petite Diced w/ jalapeno and olive oil)
1 wedge of laughing cow cheese (I used the Blue Cheese flavor)
diced green pepper
diced onion
minced garlic
grated Parmesan cheese
spices to taste (black pepper, garlic powder, basil, etc.)

Boil pasta. In separate pan, add shrimp, tomatoes, green pepper, onion, minced garlic and spices- cook over low heat. After pasta is done, drain and return to pot. Add shrimp mixture and cook on low heat. Chop laughing cow wedge into pieces and stir in to pasta mixture until melted. Top with grated Parmesan cheese.



Total: (of course it depends exactly what you use)
403 calories
54 carbs (I think the GF pasta is higher in carbs than regular)
8 grams of fat
28 grams of protein
