QUINOA Chicken CHILI

Quinoa Chicken Chili

INGREDIENTS

1 cup of quinoa, rinsed
One (1) 28 oz can of diced tomatoes (you could use crushed)
One (1) small can diced green chilies (or a can of Rotel)
Two (2) 16 oz cans of black beans, rinsed, drained (I used Bush's reduced sodium)
One (1) 15 oz can of whole kernel corn, drained
3 Cups chicken stock
2 large chicken breasts, frozen or thawed (cook longer if frozen) (I used 23 oz)
2 cloves garlic
2 tsp cumin
1 tsp crushed red pepper
2 tsp chili powder

HOW TO PREPARE
1.) Toss everything into slow cooker and cook for 6-8 hours on low or 4-7 hours on high until chicken is done and falls apart

2.) Top with cheese, sour cream, avocados – whatever sounds good to you!

    Thanks for sharing this recipe. I've wondered how I can enjoy quinoa other than a salad type thing. Sounds like this would work!

    Sounds yummy - with that much chicken stock, does this end up soup-y or does it all cook off? I like my chili THICK!

    Doubt it'll be soupy AC ... To cook quinoa, it's a 1cup quinoa: 2 cups stock. The additional cup will likely cook off and/or assist with the flavours coming together, ending up with the thickness you like in your Chili.

    Doubt it'll be soupy AC ... To cook quinoa, it's a 1cup quinoa: 2 cups stock. The additional cup will likely cook off and/or assist with the flavours coming together, ending up with the thickness you like in your Chili.

    Either that or withhold a cup of the stock and add later if you need to thin it down a little to get the consistency you like. (Make sure you drain the corn, also, unless you use frozen)

    Just ate my first bowl and it was very yummy. It definitely is more stew consistency than soup, but if you like it really thick I would definitely withhold a cup of broth and adjust thickness at the end.

    That is what I love about things like soup, stew, and chili: they are extremely adaptable. Don't like corn? Don't add it. Have extra chicken thighs? Throw them in instead. Bell Peppers, onions, celery, and other veggies would be good in this.

    BTW: I mentioned this recipe to my Mom who had just recently bought a package of quinoa because everyone was talking about it on the food shows but suddenly realized that she really had no idea what to do with it. (She is also 93 and not real adventurous with cooking although an excellent cook and baker). She is going to throw a couple of tablespoons of it into her can of chicken vegetable soup when she heats it up and turn her soup into something a little more hearty. She was going to check the package to see how long it would take to soften up and adjust her timing for that. (and this is one example of why we are comfortable with her still living alone at that age)
