Fabulous low GI mung bean savory pancakes. I made mine plain without veggies just garlic. This recipe yielded about 13 4" savory pancakes with a crispy crust. At about 50-70 calories each depending how much oil you use and 5g of protein each. Mung beans have a super glycemic index of 25 and are loaded with fiber. They are really an excellent source of balanced carbs. They are very sturdy and make an excellent sandwich.
