I calculated my bmr and it was 1725.35 which means my body is using 2,018 calories each day. I just started counting calories a week ago and have been staying at or below 1200 calories. What I was wondering was if I could actually eat like 1500 to 1700 calories and lose weight. That way when my body gets used to that and start to plateau I can decrease my calories again

Technically speaking yes you could eat that much and still lose weight.
Your body doesn't get "used" to anything and you don't plateau until you are at maitenance which can happen as you lose weight that is why you re-evaluate your weekly weight loss goals about every 10lbs...along with calorie goals to prevent being at maitenance until you are at goal.0 -
You should not ever eat below your BMR. An ideal number is between your BMR and TDEE, typically 10-20% below your TDEE.0

eating below your BMR is not a death sentence and it won't hurt your metabolism if it's not done for years and years...0 -

IE: Female weighs 200lbs at 5'2 and 25 years old. Doesn't exercise and has a sedentary job. BMR is 1700. Minus 500 calories for a loss of 1lb a week to 1200 is fine for this person to do.
While it's a pretty good rule of thumb for those who don't have a lot of weight to lose, it's not always going to be a mandatory rule.
