I've got a few of these, and as my mom is an EXPERT at this diet, I'll be getting more and posting here too!!

My first is a lemon mousse.

Make a thing of diet lemon jello, but only use 1/2 of the amount of water specified on the instructions. Completely dissolve mix, and the cool quickly with ice (4-6 cubes). Once the ice has melted, stir in about 250g (1/2 a container) of sour cream, and then put it in the fridge till set.

This is a beautiful dessert, even yummy for non-dieters! My boyfriend (non-dieter) loves it!

    Ham and Asparagus Melt

    Cook up a ham steak in a pan, then spread some seeded mustard on top. Line up asparagus spears on top, and then lay a slice of swiss cheese over everything. Put it in the oven until melted.

    This one is so easy, and so yummy!!

    I've got a coconut almond bread recipe coming soon (just waiting on Mom to send it through) that's really good. It's made from ground almonds and coconut oil, and sort of has the texture of banana bread. Perfect for when you're craving some bread! And no guilt!
