Faux Shepherd's Pie

So I had ground turkey that I needed to use and I came up with this:

Shepherd's Pie
16 oz - Shady Brook Farms 99% Fat Free Extra Lean Ground Turkey
8 cup - Cauliflower, cooked
3 tsp - Lea & Perrins, Worcestershire Sauce
1 cup - Onion, chopped
2 cup - Carrots, chopped
3 oz - Cabot 75% Light Vermont Cheddar
1 cup - Cherry Tomatoes, sliced
4 oz (1 packet) - Campbell's French Onion Soup
2/3 cup - water
salt
pepper
garlic (powder/jar/fresh)

Nutritional Information:
Servings per Recipe 4, Cal 294.8, Fat 4.1g, Carbs 24.7g, Protein 40.4g

Directions:

Pre-heat oven to 400 F.

Steam whole head of cauliflower. While the cauliflower is steaming brown the onions and ground turkey in a large skillet adding the Worcestershire Sauce. Once browned add carrots, french onion soup mix , and 2/3 cup water to the skillet and cook on Med. until water has cooked off.

While the turkey mixture is cooking take the steamed cauliflower (should be very soft) and place it in a large mixing bowl. Mash up the cauliflower with a fork and add the cheese. Add salt, pepper and garlic to taste. Use a mixer to blend until it is a mashed potato consistency.

Slice cherry tomatoes into halves and add them to the turkey mixture. Cook until tomatoes are warm and then remove from heat and layer the meat mixture in a large casserole dish. Layer the cauliflower mash on top of the meat mixture and place in the oven. Cook on 400 F for 35 minutes.

    Shepard's Pie is one our family favorites....

    this is a great idea to 'healthy it up'!
