I am trying to find some new, very easy recipes, for cooking frozen chicken tenderloins on top of the stove (not in the oven). Usually, i use the crock pot, but I am tired of it. Tonight I cooked a few tenderloins and used about an 1/8 cup 98%fat free cream of chicken soup, added some pepper, and it was delicious, fast, and so incredibly easy to make. This made me wonder what other really easy recipes there are out there! Any quick and easy stove top recipes would be greatly appreciated!

I like to cook them in a little PAM, and then cut them up and add a package of stir fry veggies, a little low sodium soy sauce and serve it over brown rice. Yum! Tonight I'm baking them and adding some Louisiana Wing Sauce (I'm watching football and craving wings).

A little brown rice, some veggies if you want, and some egg beaters added at the end...makes a great stir "fry"
  • I like to saute some garlic and grape tomatoes and add it to the chicken.. then top it on some whole wheat spaghetti noodles :-)

    Chicken Fajitas!!

    Thaw the breasts and cube
Marinate in fresh squeezed lime juice, garlic powder, cayenne, cumin and a pinch of oregano
Dice some onion & a jalepeno (seeded)
Sliced Bell Peppers (fresh or frozen)
Heat a nonstick skillet (sprayed with PAM or with a drop of olive oil)
Toss in the onions and jalapeno and saute until the onion starts to turn clear
Add the chicken (juice and all) cook until you can't see anymore pink on the outside
Add the bell peppers cook until bell peppers are al dente and the chicken is cooked through.

Serve on corn tortillas (most are 2 for 100 cals) heat these bad boys in a skillet it's WAY better than microwaved.
Top with fresh pico de gallo and/or avacado.

    YUMMERS!!! :)
