White Potato Recipe

I am trying to find something to do with the load of potatoes I have. I did a search and could only find good sweet potato recipes. Anybody have suggestion for white russet potatoes?
I may just make potato salad and go light on the mayo and use more mustard.

Mashed potatoes with light butter and 1% milk...0

Peel them, sliced and boil them in water but don't let them turn mushy, and drain. Sautee onions and peppers (any color) in a tbs of olive oil and when they are almost done, add the sliced potatoes.
Add a little bit of salt, black pepper, and about a tsp of paprika (sweet pimenton), toss all the ingredients and enjoy. If you like mushrooms, you can also add some. Add some water, cooking wine or broth to the mix and you will get a nice brownish red juice that will go nice over a breast of chicken or fish.0 -
Today for lunch I had a baked russet with ranch beans and jalepeno peppers on it...tasty, tasty, tasty. I also slice them thin to make gratin (sometimes just russets, sometimes with red potatoes, too.) Also, baked potato soup is darned good, but includes cream cheese and cheddar in addition to onions, Spike, shallots, chives, garlic, pepper and broth.0

If sodium is not an issue for you, cube the potatoes (leave the skins on), mix them with half a packet of Lipton onion soup mix and 1 T olive oil. Spread them on a shallow baking pan and bake at 425 for about 20 minutes (flip them over halfway). They are soooo goood, my kids beg for them but there is a lot of sodium in the onion soup mix.0

Potato and cauliflower curry!
I make a recipe similar to this one (http://vegetarian.about.com/od/vegetarianindianrecipes/r/caulicurry.htm). I also tend to add other veggies - whatever I have on hand (peppers, spinach, zucchini, anything works). Potatoes and curry go so well together - It's a hit every time! The whole family loves it as a side dish and I really enjoy it as a main dish for lunch. You can serve it with another carb but it seems like overkill. I'd be more inclined to serve it with a salad, over a bed of spinach, or with a protein for a balanced meal.

Light potato soup! Dice the potatoes, and cook them in broth with some chopped onions. When they are tender, add some cubed light cheese (american or velveeta melt the best, although they aren't real cheese), and just enough milk to make it white. Smush a little with a potato masher, season with pepper & enjoy.0

I make roasted potatoes with a little olive oil, a little salt and pepper, and plenty of garlic powder, paprika, thyme and rosemary. They are delicious! I just cut the potatoes (skins on) into almost bite sized pieces, put them in a large Ziplock bag, toss in the oil and spices and shake shake shake! Once they're pretty evenly coated I put them on a baking sheet and they go in the oven (350ish) until they're soft when poked with a fork.0
