Marinades and such...

So tonight i am going to have some salmon that i want to marinade in a brown sugar and soy sauce mixture. How on earth do i determine exactly how much brown sugar i am eating? I am going to add about a half a cup to the marinade, but how much of that is absorbed into the salmon? I'm not going to be "drinking" every last drop of the marinade of course.

I have saved room for it so i'm not overly concerned about it, I am just curious about this. Anybody have any thoughts?

    The point of a marinade is to get the sugar and salt to the meat. Thru osmosis, I believe it is, the sugar/salt water of the marinade swops itself with the water inside the meat until the overall water mixture in the meat is equal to the sugar/salt mixture in the marinade. Long story short, my understanding is you get more of the sugar than you think.

    That being said, when I track calories from marinade, I calculate that about 33% of the total calories in the marinade gets into the meat itself. Don't know if that's accurate. But it seems to work for me.
