Female about to start weight training, advice please?

So, I've finally found a local gym where I can do proper weights. I'm about to move on from Jillian Michaels to insanity, but I plan to supplement it with some serious weight training. Mainly to get a bigger, rounder bum!
I don't think I'll need to train often, what with the insanity in the morning and I may do a Jillian DVD as a treat when I've finished work for the day. So, serious weights maybe a twice weekly?
I'm thinking lots of compound moves and need to know about proper form and etiquette in the weight room. I've only ever done weights at an all women's gym and it was so long ago that I barely remember!
I also have a problem... When I was younger, I kept suffering repeatedly with frozen shoulders, had physio to get movement back, but my shoulders and arms have been incredibly weak ever since and can become frozen again by even things like too many pushups. GP says this is just something that happens to people and they don't really know why.
So, any advice on protecting my shoulders whilst still building a bit of upper body strength?
One more thing, any advice on whey protein drinks that won't make me gag?
Sorry mods, I think I should have put this in the exercise forum.
