    Made without marshmallows- these healthy Rice 'Krispie' treats are a great way to enjoy a childhood favorite.
    HEALTHY RICE KRISPIE TREATS
    Prep Time
    10 min Total Time40 min Prep Time10 min Total Time40 min
    Ingredients
    1. 1/2 cup creamy almond butter* (make own – toast whole almonds; grind 1 cup into ½ cup in food processor…)
    2. 1/8 cup of honey
    3. 1/8 cup of brown rice syrup ( I used Eden’s organic barley syrup – didn’t have rice syrup)
    4. 1 ½ tsp. vanilla extract
    5. 4 cups whole grain, brown rice cereal (I used Nature’s Path Organic brown rice cereal)
    6. 3 - 4 Tbsp. dark chocolate chips or your favorite chocolate, chopped
    7. 2-3 Tbsp. toasted, chopped almonds for garnish
    Instructions
    1. Line an 8x8 baking pan with a sheet of parchment paper - hang over the dish for easy removal.
    2. In a medium-sized pan over medium heat, add almond butter, honey, and vanilla, stirring until the almond butter is melted and fully combined with the honey.
    3. Remove from heat and add the cereal, stirring well everything is fully combined – best to ‘get in there’ and mix with your hands!
    4. Pour into prepared baking pan and use a spatula or your hands to distribute the mixture evenly, pressing down firmly to ensure that the mixture is tightly packed.
    5. Place chocolate into a microwave safe bowl and nuke on high in 20 second intervals, mixing between each. When chocolate is fully melted, drizzle over the top of the packed cereal mixture using a spoon and sprinkle with toasted, chopped almonds
    6. Place pan into fridge and allow to cool for ~30 minutes before cutting into squares.
    Notes
    1. * Any nut butter will work. Or use soy nut butter for a nut-free version -
    2. ** Sub in brown rice syrup to make these vegan.
    3. Maple syrup and agave will not work because they're not thick enough.


    I would try the Noosa yogurt, but have not ever seen this at any store in the city I live in. I'll have to source it out! The fruit parfait with cereal looks wonder...great dessert:))

    I'm not sure that mentioning that something has more calories than the version its meant to replace is snarky or so childish that you would suggest that someone must have their mother cook for them. Calories are, after all, something of great concern to many here and being aware of them is one of the keys to success no matter the goal.

    I'd have to question your usage of the word.



    Tho, for the record, your response was pretty snarky. But you know. Actually snarky, not some weird definition of snark.

    Thankyou for the recipe :happy: the only thing is OH doesn't eat sweet stuff, which means I would have to eat them all :tongue:

    I'm having jelly with strawberries with ice cream later :smile:

    Oh and I must make some smores, we don't have graham crackers here in the UK, so digestive biscuits will have to suffice xx
