Hummus Quinoa Salad

Hi all, made this for the second time tonight, and thought I would share...

I find that a simple sandwich doesn't fill me up for lunch, so have taken to making a hearty salad in advance that will last 4-5 days in the fridge, this is my fav at the moment. Love other suggestions though!

Ingredients:
2 cup water
500 ml liquid vegetable stock
170g dry quinoa (approx 1 cup)
200 g broccoli (bunch)
260g cauliflower (approx 1/2 head)
270g carrots, diced (approx 4)
1 tsp crushed garlic
2 tsp nandos sauce
2 leaves fresh mint, shredded
2 tsp balsamic vinegar
90 g hummus
greek yogurt to serve (approx 40g per 400g serve)

Preparation:
1. Mix the vegie stock and water, and bring to a boil.
2. Add in the quinoa and boil for about 12 mins
3. Meanwhile, steam the broccoli & cauliflower in the microwave, dump in ice water and set aside.
4. Add the carrots to the quinoa and boil for a further 7 mins.
5. Take off the stove and allow to cool.
6. Mix the garlic, nando sauce, balsamic vinegar and hummus through.
7. Fold vegetables and mint through, serve with yogurt to the side.

I've been serving with Greek yogurt, and allow myself a generous 400g serving, works out to be about 1400kj (335 cal) per serve, including the yogurt. Above recipe makes about 4 serves. I've added asparagus when in season, and am thinking about trying it with capsicum too.
