Hard boiled egg perfection!

http://www.seriouseats.com/2014/05/the-secrets-to-peeling-hard-boiled-eggs.html

Basically, boil your water first, drop your eggs straight from fridge into boiling water, reduce to just barely below boil simmer, 11 minutes, straight to ice bath!

No problems, peeled like a dream, even my 8yo had no problem with them. Tender whites, perfectly set yolks! YUM!

I do that but 12 minutes and no ice bath, just a cold rinse. Works great.

If you have trouble with shells cracking on entry to the boiling water, try bringing the eggs closer to room temp first.

Nope, no problems with cracking. I lower the eggs in with a slotted spoon one at a time. I find if I bring them closer to room temp before boiling, they stick to the shells moreso.

That's an awful lot of writing for hard boiled eggs. I put them in the water with a bit of salt and wait until it boils. Once it boils, I turn off the heat and cover, then let it sit for ten minutes. Then I run cold water over them for a few minutes, and then peeling is easy. Why on earth did there need to be such a huge long article?

I cheat and buy them already boiled and peeled. I'll gladly pay for someone else's labor on this one, lol.

I enjoyed the article. He got all science and data-ey, love it. I'm weird like that though.
