Does anyone have a recipe for a low sugar or sugar free oatmeal raisin cookie? My uncle loves them and wants me to make them for Christmas but he is diabetic and having trouble with his bood sugar. I really don't want to add to his troubles. Along the same thread, any recipes for low cal Christmas cookies?:happy:

The one low cal cookie I've come across is meringue cookies. Not exactly like a traditional cookie, but they are good. Made with egg white, sugar,cream of tartar and whatever flavoring you want (vanilla,lemon,mint etc). I made a batch of these this weekend and the cookies worked out to be about 4-5 cal a piece!0

I found this over at Eat Better America. Isn't particularly low in sugar but maybe you could substitute with splenda? I haven't actually baked with splenda so I don't know how well it substitutes or if it tastes weird once it is cooked.
