Clam Sauce - You will lick your bowl clean!!
Made pasta with clam sauce today and it was mmm mmm good!! It was sooo good that I drank the sauce at the end!! Came out to be 315 calories for the whole meal (Sauce:135 calories for 1/2 cup, Pasta: 180 for 1 cup).
Here we go:
2 cans Bumble Been Fancy Whole Baby Clams
2 tbsp olive oil
2 tbsp smart balance
4 garlic cloves, minced (I use a cheese shredder like Rachael Ray)
1 tsp dried basil
1 tbsp dried parsley
1.5 cups Chicken Stock
Salt, Pepper, Garlic Powder to taste
Calories per 1/4 cup: 68cal, 2 Carb, 5 Fat, 5 Protein
1. Olive Oil and Smart Balance (or other butter/margarine) into pan over medium heat, melt butter
2. Add garlic, should simmer a little when it hits the pan, wait 15-30 seconds
3. Add clams and toss to coat. Add chicken stock, basil, parsley, salt, pepper and garlic powder. Cook to simmer, allow to simmer together about 1 minute. Serve over pasta!!
This is a version of this recipe:

If you want to take a look at it and make your own adjustments. I added almost 2x the clams and used Smart Pasta.
Hope you like it! My husband (who is a little picky and not on any kind of diet) and I certainly did!
