Warm Brussels Sprout “Slaw”

Ingredients Amounts
Brussels sprouts, fresh 1 pound
Small onion, thinly sliced 1 each
Cider Vinegar 1 Tbsp
Bacon 2 slices
Dijon mustard 1 tsp
Water ¾ cup
Salt & Pepper To taste
Method
1.
Trim, halve and thinly slice the brussels sprouts.
2.
Cook bacon in a non-stick skillet over medium heat; drain on a paper towel & crumble.
3.
Add the onion to the drippings in the pan, cook over medium heat until tender & brown.
4.
Add the water and mustard to the pan and scrape up the browned bits.
5.
Add the brussels sprouts and cook until just tender; stir often.
6.
Stir in vinegar and top with the crumbled bacon.
