What happens if you do not log sleep with a FitbitOne. Should I be logging my sleep every night?

Nothing really. Though if you're using points sites like achievemint.com then you're missing I think 10-20 points a day?

    I never log my sleep.

I use my fitbit strictly for steps taken.

I have had my for 18 months now.

I'm sporadic on my logging of my sleep. You're good. No worries if you do or don't log it. Just for your own information. I usually only log mine if I'm feeling extra tired and thinking I may be more restless at night.
