Very Veggie Sauce

I wanted to share my Very Veggie Sauce recipe. It can be served over pasta or grains. I especially love it over bulgur or barley.

Very Veggie Sauce
Makes 8 Servings of 1 Cup each

1 medium onion, diced
1 medium bell pepper, diced
8 oz baby bella mushrooms, sliced
3 cloves garlic, minced
3 medium carrots, shredded in food processor
1 large or 2 medium zucchini, shredded in food processor
1 can (15oz) tomato sauce
1 can (15oz) diced tomatoes
2 tblsp ground flax meal
¼ tsp. Adobo seasoning

Sauté onion, bell pepper and mushroom in ¼ cup water on medium heat. When softened, add garlic and saute another 1 minute. Add water during all sautéing when necessary. Add remaining ingredients and stir well. Continue cooking on medium-high, stirring occasionally, for 20 minutes. Serve over grain or pasta.
