How do you guys calculate the calories from homemade marinades? Especially the overnight marinades?
Since it wouldn't be as bad as all of the actual ingredients, how do you take into account all the sodium and sugar count (the two main things I'm trying to keep in check)?

I don't track sodium or sugar (no medical issues). But, basically you can create a recipe for your marinade. Measure the marinade before & after...and count the difference. Typically a couple of tablespoons.0
