Calorie counting...? please help

Hey everyone, so for a long time (while I wanted too loose weight) I have been really strict about what I eat and seemed to weigh measure everything and always avoided eating things without calorie content information.
But I actually lost too much weight, and want to gain some back and then maintain.
I am having a really hard time letting go of measuring and weighing and only eating things I know the calories in.
How do you for example go to a local pizzeria order an eggplant parm eat 75% of it and then estimate the calories?!?! I feel like it would be totally wrong.
How do I go to a deli order a sub and estimate the calories in that? some places make subs huge with meat packed while others make them smaller with less meat..
Do the "estimating" in calories even out since you sometimes under/over guestimate?

You can "guestimate" for going out, but it's not that big of a deal. Anyway, if you want to gain weight, you can still count calories. Just up the number you eat.0

sure you need to count calories, jumping off eating whatever you like will increase the fat in you body, ur best deal is:
depending on ur ideal average calories , increase 250-500 cal to gain weight then from ur total calories : eat 55 % quality carbs, 25% protein , and 20% health fat.
for sure u need to work out, then you will build the curves that everybody likes
